Vegetable Stock

 1 Carrot
 1 Leek
 1 Onion white
 Vegetable cuttings
 5 l Water
 1 tsp Black Pepper corns
 1 Bayleaf
 1 tsp Salt

Wash the vegetables and chop them into mirepoix.

Combine all ingredients in a pot and bring to a boil.

Bring to a boil and then simmer over low heat for about 1 hour.

Strain through a fine sieve. If necessary, strain through a cheesecloth.
