Cut the lemon into slices and place them along with the garlic clove and thyme sprigs into the cavity of the fish.
Mix the flour with the salt. Lightly beat the eggs and incorporate them into the flour-salt mixture. Gradually add the water and mix until you have a smooth dough.
Wrap the dough in plastic wrap and let it rest for 30 minutes.
Preheat the oven to 180°C.
Divide the dough into 2 pieces and roll each piece evenly with a rolling pin to about 1cm thick.
Place the prepared fish on one rolled-out piece of dough. Using a knife, cut around the fish about 5 cm away from it.
Brush the edge with some beaten egg to help the dough stick together.
Place the other piece of dough over the fish and trim off the excess dough with a knife so that it matches the size of the bottom piece.
Press around the edge with a fork to seal the two pieces of dough together.
